Tofu Burger

2 pieces firm tofu (1000 g and 125 g)

½ medium carrot, grated

½ minced yellow onion

½ cup catsup

¼ cup prepared mustard

3 tbsp tamari (soy-like sauce)

juice from ½ lemon

2 tbsp dried chopped parsley

1 tbsp each: chilli, paprika, basil and garlic powder

½ tsp tobasco sauce

1 tsp salt

1 ½ cups bread crumbs

 

1.     Process 125g piece of tofu in food processor until smooth.  Grate remaining tofu.  Combine all tofu with remaining ingredients.  Add more bread crumbs if needed to make the mixture firm enough to shape.

 

2.     Form mixture into patties.  Place in lightly oiled skillet and brown on both sides.  Serve burgers with horseradish mayonnaise.  Makes 10-12 medium-sized patties, about 6-8 servings.

Phirni

Since this is our first post, we would like to get off to a sweet start! Phirni is a rice pudding similar to Kheer which makes for a delicious dessert after a meal or special occasion.  

Phirni

 

3 cups milk

¾ to 1 cup rice flour

¾ cup more milk to mix with rice flour

½ cup sugar

½-1 tsp saffron or kewra

Almonds and raisins to taste

 

Bring 3 cups of milk to boil.  Add mixture of rice flour and milk.  Stir till it thickens to become pudding.  Add sugar and nuts etc.


You can serve it slightly warm or chilled. Either way, it makes for a delectable delight.
